Occasionally I will splurge and eat some dairy, a scoop of ice cream in the summer or a slice of pizza with tons of mozzarella melted on top, and it always tastes so good.
The problem is that about a half hour later I begin to feel bad. Really, really bad. My nasal passages begin to swell up and I find it difficult to breathe. I find that I have a lot of phlegm in my throat and have to clear it constantly. Many times, depending on how much I have, my stomach begins to ache and my digestion suffers for several days. In the end, I always regret it.
But I still crave that wonderful taste of dairy treats in the summertime so I developed a recipe for a delicious vegan cherry milkshake that is easily just as good as the one you would find at the corner ice cream shop (probably better).
Usually, your local ice cream shop makes their milk shakes from chemical laden ice cream mix filled with refined sugar and mixes it with cherry syrup which is made from lots of red food dye and high fructose corn syrup– I doubt the flavoring has no actual cherry in it. I have developed one that uses coconut milk, chia seeds, vanilla and REAL cherries. Mine not only tastes good but is also nutritionally dense so it feeds your body what it needs to be healthy.
- 1 cup fresh or frozen organic pitted cherries
- 1 t. vanilla extract (read labels, avoid HFCS)
- 1 can full fat coconut milk with no added gums or sulfides
- 1 T. chia seeds
- 6 medjool dates soaked for at least 6 hours in filtered water in the refrigerator.
- 6 ice cubes (optional)
Place all ingredients in a high speed blender and blend to desired consistency. I only add the ice if my cherries are not frozen. I also like mine a little chunky but blend yours to your taste.
