Inflammation and blood pH levels are common topics here. Both issues are critical to good health. Unfortunately, dairy is one of the biggest contributors to both conditions. It should be no surprise that our bodies are so adversely affected by diary… from multiple animal sources. We are the only mammal that weans from milk perfectly designed for us to eat, human milk, and then begin ingesting the milk of another species; milk that was designed to grow a totally different animal with totally different nutritional needs.
But let’s face it. Quitting dairy is tough. Really tough. It may be really bad for you but, it sure does taste awesome! And the processed substitutions are not only made with questionable ingredients but they are, well, just not the same.
Today I am sharing a wonderful recipe with you that will help stave off the cravings for milkshakes or mousse or ice cream. The great thing is that it is one basic recipe that can be used to make all of these different treats. So whether you have a dairy allergy, choose to go dairy free to feel better, or even if you are a regular dairy consumer, I am quite sure you will find this recipe delicious!
- 1 Tablespoon Chia Seeds (you can use white or black)
- 1 teaspoon vanilla
- 1 can full fat coconut milk (I use Thai Kitchen)
- 1 Packet stevia (you could use raw honey, maple syrup, or 6 soaked dates)
Combine all ingredients and blend in a high speed blender. If you do not have a high speed blender, you can grind the chia seeds in a coffee grinder first, then add to the other ingredients.
Now is the time where you get to decide what to do with the base!
If you want to have some ice cream, add the base to your ice cream machine following the manufacturer’s instructions.
If you want a popsicle, add to molds and freeze.
If you are interested in mousse, pour into a container and refrigerate overnight. The chia and coconut milk will thicken nicely.
If you simply cannot wait, throw a few ice cubes in the blender and give it a whirl to make a milkshake.
Also, you are not limited to only vanilla! Put in a tablespoon of raw cocoa for chocolate flavored treats. Or, blend in some fruit; I have used blackberries, raspberries and mango to make delicious desserts that make me feel as though I am eating a dairy treat.
